Harvest, benefit and conservation in cassava ( Manihot esculenta Crantz) crop. II. Preservation practices and methods of packaging and transportation and harvest systems of roots

Abstract
A study was carried out at Instituto de Investigaciones de Viandas Tropicales (INIVIT) of Cuba during 2008 to 2011 to
determine different conservation ways for human consumption and to evaluate different packaging and transportation
methods; as well as, harvesting systems for root preservation. Two experiments were carried out with clone 'Señorita', in
experiment 1, it was harvested at 12 months of sowing and then 50 roots were evaluated in six treatments, three with stump
and three without stump and conservation in sawdust, in nonsterile river sand and without coverage at air without substrate.
Water was applied to treatment with sawdust and river sand every two or three days to maintain the humidity during the
assay. In the second experiment, the clone 'Señorita' was planted in four plots of 200 plants (4.5 x 35.1 m) in two bands and
was harvested at 12 months of planting, four treatments were applied: manual harvest with and without irrigation prior to
harvest and harvest with implement (animal traction) with and without irrigation before harvest. In the plot where cassava
was harvested manually with previous irrigation, roots were packed in: wooden boxes of 60 x 35 x 30 cm; jute sacks of 100
x 50 cm and bulk on a trailer. In the different treatments and conservation times evaluated, there were significant differences
for root total and mean weight. The best results for utilizable weight were observed in the treatment with stump and with
sawdust and river sand moisture, while roots without stump and without coverage were not conserved for more than 15
days. It is feasible to pack and carry cassava roots in jute sacks to avoid root damages and irrigation prior to harvesting is
essential to have less root damage when harvesting is done manually.

Resumen
En el Instituto de Investigaciones de Viandas Tropicales (INIVIT) de Cuba durante los años 2008-2011 fue llevado a cabo
un estudio para evaluar diferentes formas de conservación de las raíces de yuca para consumo humano y comprobar
diferentes métodos de envase y traslado, así como de sistemas de cosecha para preservarlas Se realizaron dos experimentos
con el clon 'Señorita', en el 1 fue cosechado a los 12 meses de efectuada la plantación y luego se evaluaron 50 raíces en seis
tratamientos, tres con tocón y tres sin tocón y conservación en aserrín, conservación en arena de río, sin esterilizar y
conservación sin cobertura, al aire, sin sustrato. A los tratamientos con aserrín y arena se le suministró agua cada dos o tres
días, manteniendo la humedad durante el ensayo. En el segundo experimento, el clon 'Señorita' se plantó en cuatro parcelas
de 200 plantas (4,5 x 35,1 m) en dos bandas y se cosechó a los 12 meses de efectuada la plantación, se aplicaron cuatro
tratamientos: cosecha manual con y sin riego antes de efectuar la misma y cosecha con implemento (tracción animal) con y
sin riego antes de efectuar la misma. En la parcela donde la yuca se cosechó de forma manual con un riego previo, las raíces
se envasaron en: cajas de madera de 60 x 35 x 30 cm; sacos de yute de 100 x 50 cm y a granel en un remolque. En los
diferentes tratamientos y tiempos de conservación evaluados, existieron diferencias apreciables en el peso total y promedio
de las raíces, donde se observaron los mejores resultados en el peso útil al conservar la yuca con tocón y con cobertura de
aserrín o arena humedecidos mientras que las raíces sin tocón y sin cobertura no se conservaron por más de 15 días. Es
factible envasar y trasladar la yuca en sacos para evitar los daños a las raíces y es imprescindible efectuar un riego a la
plantación antes de realizar la cosecha, logrando los menores daños cuando ésta se realiza de forma manual.
